Lactococcus lactis

This Gram positive coccus is most frequently found in pairs and short chains of spherical cells. It is catalase negative and exhibits facultatively anaerobic metabolism. Most frequently isolated from raw milk and milk products, but can be obtained from plants and other foodstuffs. It is used industrially in the production of buttermilk and cheeses, and in pickling vegetables. Its role in disease production is negligible.
